Mortlach 21yo

This fragrant Mortlach is actually the result of a double finish in both Pedro Ximenez casks, and second fill dry Oloroso butts to somewhat tame the sweetness and provide a solid winey and slightly sour balance to it. At the nose it’s clearly nutty and influenced by the notes of dry Oloroso, a classic profile which is well suited to the meaty and slightly smoky aroma of this malt. At the palate it is rich but still dry, and very complex: initially aromatic like a herbal liqueur, then turning on nuts and dried plums but still remaining on the dry side. Finally, it grows huge on black unsweetened liquorice before leaving with a lingering peppery impression that lasts for a long while.
